Our food is a combination of local ingredients with foreign technique. The dishes are like nothing you will have ever tasted before – coconut lentil curry soup and bread as if it were right out of a boulangerie in France!
The mission of our restaurant is to provide you with the most nutritious food possible while taking good care of our environment. We do this in several ways:
1. For lunch and dinner we always offer a fresh salad bar with over 15 ingredients including fruits and vegetables. Some are organically grown in our garden: snow peas, red lettuce, cabbage, watercress.
2. We bake our own bread on site with whole wheat flour (white is also available) to avoid packaging and preservatives.
3. Most of our dairy products come straight from our cow to cut down on the negative externalities of importing and packaging food. Our three Jersey cows are hormone-free. Fresh cheese, yogurt, cream and milk are offered in the restaurant daily. Our coffee is semi-organic and produced on our property. All of our chocolate products are 100% cacao from Bocas del Toro.
4. Our menu prioritizes vegetarian options, fish and poultry.
